In the past, I've used a gopro rollbar mount on the nylon bushing of the tow point. easy enough and there's plenty of room for the line to attach still. easy to just tie the mount into the line to it swivels with the rider.

I have a gopro wrist strap mount. put some anti skid shelf lining material on the bottom of the mount itself. Cheap and easy, The gopro has a wide enough field of view to capture the action, no need for it to turn.
