Marine Tex is made for this purpose. You'll have trouble finding the repair afterward if it's done well...and it's not difficult to do. There won't be any need to put gel coat over it.
5200 is more of an adhesive although it adheres so well it also serves the purpose of sealing. It can be a little more difficult to work with since it's so sticky. It will cure a little more flexible. Not sure if you can put gel coat over it.
If you really want to go the gel coat route you'd be better off mixing fiberglass & resin and filling the hole. Once that cures do the gel coat. Unless your boat is showroom condition that's probably more effort than is necessary.
