Does anyone add a little ballast in the opposite locker that the rider is surfing on? I was thinking of trying that today when we head out. Maybe just a couple hundred pounds to help sink the whole stern of the boat.

All the time. Once we get the boat to list to the side we just add weight to the middle to sink it more. We found it better than absolutely all weight on the surfing side. We've actually tilted the boat too much and the swim deck really cut the wave.
You'll probably find good results.
