Just picked up a new 2007 Mobius LSV. Any suggestions on how and how long to break an engine in?

dont ride behind it and no ballast for at least 5 hours

I just got a new supra and they have the same procedures. According to the owners manual,
1st hr: below 2000rpm
2nd hr: below 3000rpm
next 5 hrs: below 4000rpm

Like ifinallygota21v said, no ballast or riding during this period. You probably shouldn't have 8 of your friends on it either, but women weigh a lot less than guys.

Vary the RPM's everytime you drive it and stay 20% below maximum redlined RPMs until 20 hours. Thats what I did....

What did your dealer say? What does your owners manual say? I can't believe a dealer would let a new boat go out without discussing break-in, warrenty, and other new boat procedures. That is extremly poor customer service.

Don't run at a steady RPM for any length of time.
Don't put Maximum load on the engine ore driveline.
Don't worry too much.

All you want the engine and transmission to do is run without working so they can polish surfaces smooth. Too much load can cause grooving or scratches that won't help. Too constant an RPM does not polish the whole range of motion.
It's a good time to get to know how the boat drives and what all those stereo buttons really do.
Just be a bit kind to it for 10 hours.
