I was wondering if the stock ballasts, in a X-2 2007, were enough for wakesurfing? Should I add more weight?

You need some weight. I have an 06 X2 and I run an extra 1600lbs in addition to the stock ballast. You need some good weight in an X2 being only a 20' boat and the stock ballast only provides 650lbs which is not enough. I have been playing around with my weight since last year and 1500-1600lbs seems to do the trick for me. When I run that much extra weight that is with my wife and 2 small children. If you have more people then that then you can back off the extra ballast.

How could I add 1600 lbs of weight without losing too much space?

yep you loose some space. Use a combination of pop products and ballast bags that's what I do. I put 800lbs in back locker with a 440 bag and 400lbs of pop products. Then I put a 440 bag behind driver seat with a 350 bag on back seat. Or I put a 150 0n back seat and 150 in the front. You have to play around with it. Depends on people ballast too.

Here is a shot behind my X2 yesterday running 1500lbs, yes that is a bag on top of a bag in the pic. I can surf 12-15 feet back. I have been messing with my weighting for over a year now and we surf just about every weekend. It is hard to get the wave really clean on the goofy side because of the prop rotation. I have just about done every weight configuration possible over the last year and this wave has good size and a large pocket to surf in. Not bad for a 20' boat.

Nice wake Darryl! I'm also goofy, so I guess I have the same problem.

Btw, do you have the trimtab on yours?
