Degrees

Just curious what the difference between different fins (specifically molded-in but I believe some normal fins have it too) with a certain degree radius, is it just the angle the fins are turned out or cupped and how does it change the ride of the board? I don't know if anyone here really knowledgeable about board design could answer but I was just curious.
