Many apartment complexes are RV friendly and have fenced in areas (with padlock on gate) where you can park your boat. Storage garage isn't a bad idiea either, they are now practically on every major intersection -probably three storage places within a mile of UCF I most certainly would NOT leave it parked in an open parking lot. It will either be stolen, torn apart or someone will be living in it. When I first moved to Orlando, I found an apartment on the corner of Goldenrod and Aloma that allowed dogs and had a boat ramp. You might also think about renting a house where you could park your boat in your own driveway - plenty of those available in the Clermont area.
