How important is this and what is done besides an oil change?

Very important and check your manual. Basically it's all filters and fluids.

It is very important to get all the factory shavings and other crap out of your engine and also have a check over all the bolts and whatnot on your boat.

pretty sure it has a significant effect on your warranty as well, depending on manufacturer.

Very important.

Your dealer should be aware of certain quirks of your boat and check for those things. They're supposed to do a lot more than just an oil change.

of all the oil changes your engine is ever going to get, the first one is the most important.

When the engine is put together there is a lot of junk that is either inadvertantly allowed inside or simply the residue of the assembly process. The rings and cylinders take a seat, and in the process shave small amounts of metal into the oil. Dust and dirt from the factory are inside. Cast iron parts are often coated with varnish or other materials to keep them from rusting before the engine is assembled and this might not all have been washed off. Gears ,mating for the first time, polish each other and drop metal in the bottom.

The list goes on.

Don't delay the first oil change because you really want to get all that junk out of the oil.

It is also a very wise thing to check the tension on the belts and generally give everything a good inspection. A small problem caught now can keep it from becoming a big problem later.

oil changes are easy to do yourself. The dealer wants 300 for the 20 hour service, which is oil and filter, and grease the outdrive or something like that. I just feel that I can do this myself since its nothing complicated

My dealer was very reasonable on the 20 hour. I had planned a trip tho, and called and let them know that I couldn't make the 20.. it'd end up more like 30. They were totally cool. If that's part of your concern, just call them.

Ditto on the very important comments. You paid good money for the toy and a couple of hundred will save you thousands down the road. The old saying..."You get what you pay for."

Isaac, since you mentioned the outdrive, thats one of the important items they check. They check the drive unit for alignment and just like everyone else stated-junk/shrapnel in the motor. Also a good service dept will check your trailer for problems. $300 is a good price for a service.
