I am not sure what the name of the trick, but it is where the person rides into the flats then drops (or falls) on their back, spins on the water surface then gets back up. If anyone can point me to or provide tips on how to do this it would be appreciated.

It's called a tumble up. Shaun Murray does them all the time, I'm sure you could probably find a tutorial from him somewhere. Or just search youtube for a barefooting tumble up, which is very similar.
