OK

The center fins are out and have been riding without them a few times. I ride with my right foot forward but can ride switch like its nothing. I can olly, its not huge, but its 6 to 12 inches high and getting higher everytime out. I can slice across the wake heel side either stance like its nothing and can do it toeside either stance but its not as fluid.

What is the next step? as far as progression goes?

Can you clear the wake, do grabs, or spin 180s yet? All of those are good places to start

1 wake jumps...then 2
180 surface spin
lip slides
butter slides
360 surface spin
wake jump grabs
ollie jumps wake to wake....progressive jumps into flats
1wake 180's

adjustment to michael z's progression order...
1,butter slides
2,Lip slides
3,180 surface spin
4,1 wake jumps...then 2
4,wake jump grabs
5,1 wake 180' followed by w2w 180s
6,toeside w2w, followed by toeside w2w with grabs.

the surface 360's are good to do when the boat is slowed down to aout 17 mph, good drills helps strengthen the muslces that will be used when you take 3's w2w

then repeat 1-6 riding switch (other foot forward)

or

you could learn switch as you go like
step one then step one switch, etc.

Learn from what i regret most: putting off riding switch. your riding will be so much stronger and more FUN if you become more familiar with both directions of riding.
