I was just looking through the wakeboard and binding buyers guide and I noticed where it says suits skill level intermediate/advanced etc. Are there any actual definitions for the skill levels? Cos I know in skiing, its to do with carving or turning parallel on certain colour runs, ability to cope with off piste etc. So what about here?

The only factor I can see is thickness of the footbed. If you are getting huge air, the extra padding helps.
Ankle supprot in the "pro level" bindings go from very firm to very loose, depending on preference.

the level of tricks you can do. check out the "trick list" with the link on the front page of WW. figure out what you can do, and there's your level.
