I've got the same boat. I run a couch in the back, about 500-600 in the front, and then another 300-400 in a sac on the side of the engine compartment. One word of warning: you're fuel tank vent is right there at the back edge on the spotter's side. You're liable to get water in the line. I take a bit of sponge and jam it in there. It prevents most of the water from getting in but still allows air in to the tank. As for speed, not too sure since I haven't calibrated my speedos in a while and I don't have PP. We'll usually run about 2300 RPM, though.
