I have a '91 Supra and it doesn't get that great of gas milage. Would buying a certain kind of prop improve the fuel economy enough to notice a difference?

Get a biger riding crew....or get used to the fact that your gonna drop $120 every time you take your boat out. The prop won't be very noticeable, anyhting you gain in economy , you'll more than likely lose in performance.

adam is correct --however --how long has it been since it has had a tune up -- plugs, wires, dist cap and rotor button play a huge factor --also a fuel fitler change could help...
