60% weight in the back, maybe a little more, and 40% in the front

Two 260s in the rear
370 in the bow

....then get more sacs

when we fill all the sacs, the boat handles poorly. is this anything to worry about?

When I had my 205, I had it weighted like this:

100 lbs of lead under each gunnel
250 lbs of lead behind the back seat
100 lbs of lead under the bow seats
250 lbs ski locker sack

The boat definitely handled like it was weighted. But the wake was well defined, nice ramp, medium sized. The trick is finding that happy medium you can live with.

IMO, a 370 lb sack in the bow would sub the bow if your not careful.

That's what my dad is afraid of. dunking the bow. we usually have 5-8 people each time we go and the lake is always pretty choppy.

So put the two 260s on each side of the motor & fill'em up. If your people are sitting up front, then put the 370 in the back. And if their in back, partially fill the sack up front.
You want to balance it somewhat. Too nose heavy & it's hard to drive. Too stern heavy & it's going to plow water & make a messy wake.

With that many people in the boat, sack the back and ride
