After rereading you first post I have another comment. The backfire and cutting out sound like an experience I had with the distributor cap and rotor. There is also a "limp" mode that reduces rpm to idle for a couple different reasons. Over temp, and/or lack of water flow, there is a flow sensor on the front of the motor above the transmission. I had one replaced on an 05 Avalanche, dealer said he replaced lots of them that year. It also caused a repeated "beeb" under the dash.
