There is an Overtons outlet in Raleigh, some selection. If you want to head down to Greenville to their warehouse, bigger selection.

Verital Urge will help you out tons if you want surf, sk8, or snow. But they will make it very evident to you that they have no intentions of helping you with wake. It is hard to even get the owner in his Yellow Tige' to wave at you on the lake. What exactly are you looking for?

I am looking to buy a board and bindings, but the most important thing to me is being able to try out the bindings for size.

Then you should just swing by Overton's and try some out. Then you can order them from a shop online.

Maybe you could get more feedback by making a post about Ronix sizing?! You might be able to get more feedback that way.
