Is it possible to make the transom gasket start leaking if you hit something with the prop hard enough? Also, is it a big pain in the ass to change the gasket out myself?

yes you also couldve torn the bellows on it which will allow water into the boat

I'm with Trey,check all the rubber bellows between the outdrive and the transom.They are the things that look like an accordion.If its a Merc. it should have 3.

It's highly unlikely that a gasket is your problem. I've seen the lower unit broken off without hurting the transom mount. As trey said it is probably the bellows. If not that look for serious cracks in the transom.

I've had the transom gasket fail but it was from an improper installation after service. At the end of every day we had lots of water in the bilge and couldn't find where it was coming from. You'd have to remove the leg to replace it so have a manual if you want to try it.
It is unlikely to fail as a result of an impact, but all things are possible.
