I am currently running 540# sacs and seem to have a bit more room (stock tanks are no longer in the boat) and would like the extra ballast option but will the 750# sacs fit in the rear compartments when totally full? I hope someone else may have tried it already.

I have the pro-x series fat sacs in the rear of my 97 supersport which should be the same size as your setup. They work great. Let me know if you have any specific questions. Here is a pic of one just filled with air but you can see it fits.

They are these but without the straps:
