mine sits between 160 and 165 at idle but gets up to 190 while driving

Montgomery, your temp should not get up to 190 unless you have a closed cooling system with antifreeze and a pressurized cap. You may not have enough water flow and a slipping belt or more likely a damaged imperllor

^ yup. I changed mine out a few months ago b/c i didn't do it at beg of season. Worst looking one to date. Definitely will be replaced before we start hitting it hard next year.

was 160, then installed a heater, now 140. Going to change to a hotter stat next spring to get it back up to around 160.

Al, the thermostat should be automatic, if it's working correctly. If it changed after installing the heater that's a bit weird.
Putting in a higher temp thermostat might make the air coming out of the heater a little warmer but you'll have some risks with localized boiling in the engine if it's not closed cooling.
