What is the easy way to dim the dash lights on a 2007 Malibu?

Plug an electric fire in the cigarette lighter that ought to do it!

Seriously though lower wattage lamps for a permanent job or fit a dimmer switch on the feed to the lights

You can add a resistor to suit your needs, maybe a bypass switch too so you can switch between high and low dash illumination levels. Probably want to use a good 25watt resistor, maybe 5 or 10 ohms. Radio Shack should have them. Make sure it doesn't get too hot and don't place it next to something that melts easily.
