I know these questions are everywhere but I want to see what everyone else is doing to get a phat wake. I have a 2000 Sunsetter D-Drive with the wedge and a sac in the locker. What are some options I have without losing the seating and still being able to maneuver around the boat.

Seating? Maneuverability? I think that if you want a phat wake you're going to have to sacrifice both of these in a d-drive.

I would put a fat seat in the back and about 400# in the front.

I think you have the diamond hull right? Unfortunately it doesn't put out the best wake but you can try this. I have a 97 sunsetter and put a 750lb (Claimed) gethighsports sack in the ski locker (Maybe 4-500 lbs because of space limitations) and I take out the back seat and use another gethighsports bag, completely filled, as the seat cushion. Leaves plenty of walking room and gives a decent wake.

You are definetly going to have to give up the manueverability. Here is how we weight my freinds boat which sounds to be just like yours. One Fly high fat sac in the trunk. Take it out of the bag so it fills as big as it can and still get the trunk shut. Then we take two of the BG sacs out of their cases and fill them up next to the engine pushed all the way back to the back seat. Then fill the mls and also add 150 in sand to the nose. If you have the MLS it is a fly high sac in the ski locker if not add that too. That is the best way we found to get a good wake. He also changed the prop to the acme 3 blade 12.5 pitch it works really well. You can still have people sit on the back seat, the only thing you lose is being able to walk next to the engine. We personally like this setup better than using the wedge. If we use the wedge it is usually with a sac in the trunk the mls full. The thing I don't like is you have to go slower and ride shorter with the wedge down.
