I have a 93 malibu Echelon. When we wakeboard we put about 1500lbs in it. the problem I have is.... From a dead stop, you can only give it about 3/4 throttle or else it will sputter and chug and not really go anywhere. It seems like it is flooding out or something of the sort. Even if I am cruising across the lake at half throttle (25mph) and open it up it will sputter and fall on it's face. If I ease into it really slow it will finaly go and run fine. It really sucks thought because for pulling a rider out with any sort of weight in the boat it takes forever to plane out cuz I can't "floor it."

Sounds like the acceleration circuit on the carb is failing, if it is a Holley, you might want to get a rebuild kit for it. Your symtoms sound like lean -out stumble, which could be the accelerator pump or the power valve. Once you get the carb up on the main jets, it, "runs fine", so the float levels are probably okay.
If the carb hasn't been rebuilt since 93, it is probably due.
