The best way to learn anything on the cable is to follow someone that knows how to do whatever it is that you want to learn. To stay on sliders on the cable you need to cut at the slider just a little bit. but all in all if you are just falling off of it just keep trying you'll get it.
As for the ollies make sure that you push down really hard on your back foot, and pull your front foot up

I cannot help with the rails, but I have taught a few people how to ollie.
What I usually tell people is this.
Stand tall on your board, with your shoulders square above your feet.
In a fluid motion, let your knees bend, like you are falling into a squating position with your butt on your heels, except don't go that far down... only bend your legs at about a 45 degree angle. as soon as you stop the crouching motion, start to stand up with your front foot first, followed by your back foot. you should pop out of the water.
then all you have to do is work on your timing and power.
good luck.

although I have never done this myself, I have read that to hit a rail on a cable, you should set up with the rail between you and the cable, and lean slightly away from the cable as you slide.
