Its not going to matter. On terms of sheer rocker, probably the absolute, but I think that pop is probably negligible.

Find a board that's fun to ride, 'cause the difference in effective pop between one board and another will be unnoticeable on a jet ski.

May I suggest a Roam. LF Fish is fun too. Heck, really anything is fun to ride. Haha.

pop behind a jet ski is all technique, and i've found is best from the inside out rather than the outside in. if you are a solid, fundamentally sound rider, you can get pop on any wake. there aren't any shortcuts (i.e. board shapes)
