When I am running with a full load it is 160+ but when I come off plane it is any where between 170 and 175.

when was the last time you changed your impeller? A worn impeller will cause the motor to run hotter at idle.

You can get the temperature spiking up a to 175 when you have been running hard and slow back to an idle. The power you were generating is still heat soaking into the engine and at idle it won't flow as much so it does not cool as quickly.
After just a few minutes though, the temperature should go back to the thermostat setting of 160.
