Friend of mine had a similar but not identical...

Friend of mine had a similar but not identical issue for a couple years and it ended up being the plug wires. New plug wires, Runs like a champ now.

Sounds like vapor lock if it ran fine until you shut the boat off for a while. This is a very common problem for pre 2008 moombas and supras.
