It's easiest to pull the hoses, you can pull them at the motor or at the vdrive. Most of the water is in the hoses, just a small space that runs across the top of the drive.

I wouldn't worry too much about 'the best gasket', I'm on my 2nd 351 with 1000hrs and I've only needed to replace that gasket 1 time because of a leak.

Might not be a bad idea to get a new set...
