Looks great! Did you put any varnish on it? I don't think epoxy has any U.V. protection and will yellow in the sun (if I recall correctly from my kayak building days)...

I ride behind a '94 ski and I use a 500lb sack behind the doghouse and a 250 down the side. Best setup would also have 4 -5 people in the boat.
The wake is better driver side, but functional both...
