i sometimes have that problem too. For me its because i feel uncomfortable going straight upside down, so i turn it a little and look down to the water sideways.

I've found that whenever i end up a little sideways it's because I didn't square up completely to the wake on my approach. If you hit the wake parallel to the boat you should get tripped over pretty straight.
