Any of you guys know where I can get my hands on a multipin waterproof plug and socket type thing that can be used for a quick disconnect for tower speakers and lights.

You can try a local custom bike shop. That is where I got one for my old boat and tower...

I used neutrik speakons for my tower speakers wiring through the hull. works great. They are also rated at 30 amps continous so they would work for lights too. Run the lights and speaker wiring on opposite sides of the tower. This will help to eliminate noise bleed over into your speakers.
