engine noise or exhaust noise?

We have the same boat, and we have not had a problem with any noise exhaust or engine. You could use an automotive foil backed insulation on the inside of the engine cover. But I still find your complaint odd, we really don't have any issues with our engines noise.

Engine noise on a direct drive is a lot more than a V drive seeing as you 8" away from the source of the noise.

Get some decent insulation under the cover.
