Can you lubricate your steering cable or do you pretty much have to buy a new one. My rudder and steering wheel turn freely without the cable attached to them.

New one

If you are good at hobby type repairs, you can install a zerk and lube it up. Don't nick the cable when drilling it though. The cable will need to come out of the boat either way. Upgrading the cable to a Morse is a good idea too.

A friend of mine has a 2006 Centurion Typhoon (I think, 23 footer) and the steering is way stiffer than my 2001 Wakesetter VLX. Is something wrong with his steering or is that normal for a Centurion?

At the end of your steering cable is a grease point. Put grease in it until it runs out the end. Then drive it at a good speed.

Thanks, I'll have to check it out.
