I think 0-30 mph times help indicate a towboat's performance capability. The January 04 issue of Boating Life gives the following performance figures for boats with stock props and equal fuel and passengers but no ballast:

Boat / engine / 0-30 mph time

Centurion Avalanche / Mercruiser 350 Mag MPI / 5.9 sec.
Centurion Enzo / Mercruiser 8.1 HO / 6.6 sec.
Centurion T5 Comp / MX 6.2 340hp / 3.9 sec.
Nautique SNATE / PCM ZR6 6.0L 375 hp / 5.1 sec.
Nautique 216 Team / 5.7L 330 hp / 4.5 sec.
Nautique 226 Team / 6.0L 375 hp / 5.7 sec.
Gekko Revo / PCM ZR6 375hp / 6.2 sec.
Malibu 23 LSV / Hammerhead 380 / 5.6 sec.
Malibu Wakesetter 23 LSV / Vortec 8100 / 5.0 sec.
Malibu 23 XTI / Hammerhead 380 / 5.7 sec.
Malibu 25 LSV / 8100 Vortec / 6.4 sec.
MC 230 VRS / MCX 5.7L 350 hp / 5.2 sec.
MC 280 VLD / Vortec HO 6000 385hp / 11.2 sec.
Moomba XLV / Indmar 5.7L 340 hp / 5.1 sec.
Moomba Outback / Indmar 5.7L carb 310 hp / 4.4 sec.
Session 22Si / Mercruiser 6.2L 330 hp / 6.2 sec.
Supra Santera / Indmar 5.7L 320 hp / 4.6 sec.
Supra SSV / Indmar Assault EFI / 5.0 sec.
Tige 21i / PCM 5.7L 330 hp / 7.1 sec.
Tige 22V / PCM 6.0L 375 hp / 6.3 sec.
Tige 24V / PCM 60L 375 hp / 6.4 sec.

Hope this comparison helps you figure what you'll need.
