I repack mine every year and change them as needed. Take a look at the following website for tons of information about trailer maintenance, including packing bearings:

Changing bearings is the same as packing them except that you need to knock out the old races (use a brass drift or punch) and seat the new races (there are inexpensive tools for seating races).

Like John, said not too hard to do just messy. If you really want to complicate your clean up use waterproof grease. That stuff is like glue.
